SESAME CHICKEN WINGS

I served these at an event and people couldn't stop raving about them, they disappeared in no time. To be honest, I've never understood what the obsession was with chicken wings.
I serve these wings whole, unlike in the US
where wings are served cut in half.
Wings are tiny things, don't have that much meat on their bones, are extremely cheap, and yet they are one of the most popular foods in the world. I've always used them in stocks and for soup, but I rarely make wings otherwise. But these are the best I've ever tasted.
I was inspired to make these after enjoying my Sesame Chicken so much that I wondered if I could replicate that heavenly taste with chicken wings. I did, and I'm so pleased to share this recipe.
I got a box of 11 chicken wings for 2 bucks-dirt cheap! I will be making wings more often now.
SESAME CHICKEN WINGS RECIPE
FOR THE SAUCE
1 DSP of sesame oil, 2 tbs soy sauce, 1 tbs of hoisin sauce, 1 tsp salt, 3 tbs sugar, 2 tbs of rice wine vinegar,
1 sachet of plum sauce, 2 tbs of garlic paste, 1/2 tsp pepper, 1/4 cup of chicken stock, 2 tbs of honey or golden syrup Whisk all of these ingredients together and set aside. You will also need sesame seeds.
FOR THE CHICKEN
Place the chicken in a large mixing bowl and pour enough cornstarch over the chicken to adequately coat them. Toss the wings in the cornstarch. Then heat up 2 cups of oil in a wok or pan and fry the wings in batches on high heat until crisp. Once the wings are fried scoop out with a spider skimmer or tongues and place the wings in a sieve to drain over the mixing bowl.
Discard the oil, you can always re-use this oil to fry other things. In the same pan pour in the sauce for the chicken and cook down for at least a minute on medium to high heat before adding in the chicken. The sauce should be fairly thick and sticky.
Place the chicken in the pan and coat the chicken with the sauce using a spoon. All the chicken pieces should be completely coated with the sauce.
Finally sprinkle sesame seeds all over the chicken. Serve as you desire.
