This dish is simply sublime. It's too phenomenal to just say that it's delicious. If there is one dish that I recommend from Singapore it's the Chili Crab. Chicken and Rice is okay, but it's just standard fare. THIS DISH IS SPECIAL! The flavors from the tomato-chili sauce are seriously explosive. After consuming this unbelievably amazing dish I had a chili craving like no other. It's a messy dish. You eat with your hands, you get down and dirty!

Chili Crab is consistently ranked as one of the most delicious foods in the world. I don't always agree with the foods listed or the order they come in, but I agree that this Chili Crab deserves its status. The only other crab dishes that can compete are Cioppino and Seven Seas Soup,

I had so much fun making this dish. I used already cooked crab that was available at my local supermarket. Mud Crabs are traditionally used, but you can use whatever is local and available to you. Dungeness Crab is commonly used to make this dish on the West Coast of the United States. I used an Orkney Crab and he did not disappoint. I used this video as a guide. But I ultimately came up with my own unique recipe as always. Please watch the video if you are unsure how to clean, chop, or handle the crab. This recipe is all about that delicious sauce!
INGREDIENTS & RECIPE
1 Whole Crab preferably already cooked.
Step 1 The Tomato Chili Sauce:
In a measuring jug whisk together:
3 tbs of Shrimp Paste, 6 tbs of tomato paste,
1/2 cup of Chili Sauce, 1/3 cup of water
(I use the Thai Dancer brand of Chili Sauce it's sublime)

Step 2
Peel and chop... 1 whole garlic bulb/head, 1/2 (Half) a small yellow onion or shallot, 1 large chunk of ginger. In a wide pan or preferably wok heat on high 5 tbs of vegetable or peanut oil, and 1/2 a tsp of sesame oil. Once the pan is sizzling hot turn down to medium heat and add the garlic, onion or shallots, and ginger. Saute until aromatic. Turn the heat down if you fear burning. Once aromatic and the ingredients have assimilated add the Tomato Chili Sauce you whisked together earlier. Mix the ingredients together, let the sauce simmer for 5 minutes.
Step 3
Add the crab to the pan, and let the chili sauce flavor the crab. Add fish sauce (to your taste) 1 tsp of light soy sauce, 1/2 tsp of salt or to taste, a sprinkling of sugar and black pepper to your taste. Let the crab cook in the sauce for about 5 minutes. Then remove from heat. Leave to sit for at least ten minutes before serving. Be prepared to become addicted. I think this dish is best served on a lazy weekend. I am now totally addicted.
