BRITISH SUNDAY LAMB ROAST

I love my Sunday Roasts. I don't think I could live without British food. For this recipe I have used a small lamb shoulder. Normally I cook lamb with bone in, as I think it adds more flavour to the roast. But this was as flavourful as it gets. I also love leg of lamb.
But if I'm not cooking for a large group of people lamb shoulder works best for me. I think I might actually prefer the meat on the shoulder as well, I think the shoulder meat may just be a little bit more flavourful.
As meat goes, lamb ranks number four on my favourites list, and it's so much more flavourful than beef and chicken. Despite being fourth on my list, it's been my second favourite meat this year. And this lamb roast is my absolute favourite roast of all.
Traditionally the English love to make their lamb using lots of rosemary, and traditionally they like to serve it with mint sauce. I prefer to do the roast my way, this is a twist on a British Classic.
LAMB ROAST RECIPE
THE INGREDIENTS

1 Lamb Shoulder or Leg of Lamb, make an Adobo Marinade...
1 or 2 whole Garlic Bulbs peeled and chopped or substitute garlic paste, 1 tbs Red Wine Vinegar, 3-5 tbs Light Soy Sauce, 1 Small Yellow Onion peeled and chopped or substitute chives, 1 tbs Salt (or to your taste), 1 heaping tsp of Dried Oregano, 1tsp black Pepper or Peppercorns 1 OR 1/2 tsp Cumin, *1+1/2 Cups of Olivio or Vegetable Oil blend these ingredients and pour over the lamb and rub the ingredients in. Leave the lamb to marinate preferably over night or a minimum of one hour.
