MEXICAN STYLE BUNUELOS

I first learned of this highly delicious desert after watching Mexican Made Easy, with Marcela Valladolid.
In truth my mum probably loves this dessert more than I do. She thinks Bunuelos are the best thing since sliced bread! I'm not going to lie, they are truly delicious, and my recipe like Marcela's is a short cut.
I use store bought flour Tortillas. Believe me, there is no need to waste time making this from scratch. Just buy good quality flour tortillas, and within a few minutes you'll have a highly satisfying desert.
BUNUELOS RECIPE
1 Cup of Icing Sugar, 3tbs Cinnamon, 2 cups of Vegetable Oil,
Golden Syrup or Agave Syrup or Panela
Mix Together icing sugar and cinnamon. You can do this in a flat plate with your hands or in a bowl. Place in a large flat plate or tray and set aside. Reserve a plate or basket large enough to stack the tortillas after frying. On high, heat oil in a frying pan for about five minutes or until the oil becomes hot. You can test if it's ready by taking a pinch of icing sugar and adding to oil. If oil sizzles and sugar dissolves quickly, it's ready.
Golden Syrup or Agave Syrup or Panela
Mix Together icing sugar and cinnamon. You can do this in a flat plate with your hands or in a bowl. Place in a large flat plate or tray and set aside. Reserve a plate or basket large enough to stack the tortillas after frying. On high, heat oil in a frying pan for about five minutes or until the oil becomes hot. You can test if it's ready by taking a pinch of icing sugar and adding to oil. If oil sizzles and sugar dissolves quickly, it's ready.
Turn the stove to medium to high heat and Add 1 Tortilla at a time to the oil. Let it fry on each side for about 40-60 seconds, the tortilla should puff up (turning once) until golden brown. While it's hot, rub the tortillas into the cinnamon sugar mixture on each side. Then put into a plate or basket and cover. Repeat this for each Tortilla. Sprinkle some syrup on the tortillas before serving. You can always reheat these in the microwave for about 40 seconds at a time. They are best served warm.
