Tarte Tatin is one of my favourite desserts of all time. And now that summer is here, I think it's a great time to make it. The great thing about this French Tart-apart from the fact that it tastes wonderful, is that it's really easy to make, even if you make the pastry from scratch.
I have tried many store bought versions of this dessert and I simply don't enjoy them. In this instance, home made is much better.
Now I do not make the pastry from scratch, neither do many people I know. Why give yourself all that hassle when you can just buy it?
However I do everything else. It's simple, it's easy, it's delicious, it's beautiful. It's everything you could possibly want in a dessert.
TARTE TATIN THE RECIPE
THE INGREDIENTS
8 (approximate) Large Apples, cored and quartered but not peeled, 1 stick of butter (about 5 tbs), 1 cup + 1/4 cup of granulated sugar, 1 store bought roll of puff pastry
THE DIRECTIONS
1. Heat the butter and the sugar in a pan, or an iron skillet on medium high. Please make sure your pan is not too big or small for the pastry to fit around it. Once the butter and sugar is half way through to caramelising. Lay the apples in the pan side by side.

2. If you have some apples left over, just continue to lay down extra apples in any spaces, or on top of each other. Once this is done-once the sugar is caramelised, take the pan off the stove.
3. Take your puff pastry and make sure it covers the apples, then tuck the edges of the pastry underneath the apples at the edges of the pan. Once this is done, pop it in the oven. Bake for about half an hour or until the pastry begins to brown and puff up on top.
4. Once you're done, take it out of the oven. Get a pie plate slightly larger than your pan. Place the pan over the pie plate facing down, and then turn the pan facing up holding the pie plate firm on it. Serve with ice cream or custard.
