Duck Curry "Caribbean Style"

Duck Meat is my absolute Favorite. Let me be more specific.
Duck is my favorite animal to eat in any category.
I love Duck more than pork, beef, and chicken. I even love it more than crab or lobster. Like chicken, Duck is a domesticated bird, and categorised as poultry. But for me, it has a unique taste and flavour. In my opinion, Duck is far more succulent, and much tastier than other forms of poultry. The downside is that this famous bird, is five times more expensive than chicken.

Duck Curry, or Curry Duck isn’t a common dish in Jamaica; in fact to my knowledge, Duck isn’t highly consumed in Jamaica at all. However, it may be more commonly eaten in Chinese-Jamaicans households, and it's certainly readily available in Chinese Restaurants on the Island.
In Jamaica we have Curry Chicken, Curry Shrimp, and we also Curry other sea foods such as lobster and crab. But our most famous Island Curry is the beloved Curry Goat, which happens to be my favorite Jamaican Dish.
In Trinidad and Guyana however, Curry Duck is eaten more commonly. I love Caribbean Curries; they differ from East Indian Curries, and have a unique taste and flavor. Seeing as I love Duck and I love Curry, I decided to give this recipe a try. It turned out delicious as I expected. I serve this with homemade Roti, Potatoes and Rice; the Holy Trinity of what I like to eat with a Caribbean Curry. For some reason, a Caribbean Curry just seems incomplete without Roti. This dish has become my new number 1 favorite dish. I had it for dinner for almost 7 evenings concurrently, it was that good!
