JAMAICAN COW FOOT SOUP

Cow foot soup was one of my grandmother's signature dishes. These photos of Jamaican Beef soup (cow leg/heel) were taken in what I call dream lighting, the kind of lighting I can only wish for on any given day. I maintain that lighting is the most important factor in food photography.
Even though it's called Cow foot soup, the part of the Cow is actually the leg or heel, and not the actual feet. I don't know why they call it Cow Foot in Jamaica when it's not the actual feet being used. But that's just how it goes.
As with all Jamaican soups, Cow Foot soup is super flavourful, hearty, warm, delicious, and comforting. The common ingredients are onion, garlic, thyme, scallion, scotch bonett, and what Jamaicans call provisions or hard food. These "hard foods" include yam, potatoes, dumplings etc
Pumpkins are an important part of the base and foundation of many Jamaican soups, and this one is no different. If you cannot find Pumpkin use Butternut Squash. I have not added yam to this recipe, the hard foods I used were dumplings (absolutely a must), and potatoes. Yams are delicious but they are a nightmare to peel.

THE INGREDIENTS
10 cups of water, 2 sprigs of thyme, 1 bunch of chopped scallions, 1 bunch of cilantro/coriander leaf, 1 pumpkin microwaved or baked until soft, 1 can of butter beans strained, 2 or 3 pounds of Cowfoot, 7 large potatoes cut into chunks...
