THAI ORANGE GLAZED DUCK

Even though the first Thai dish I ever had was duck in a fragrant orange sauce, it was actually food blogger Mark Wiens who inspired me to make this dish.

Even though the first Thai dish I ever had was duck in a fragrant orange sauce, it was actually food blogger Mark Wiens who inspired me to make this dish.
In his video he gives a basic yet brief run down of the ingredients, I followed the ingredients and instructions, with a twist and a turn. I used duck legs instead of half a duck, and it worked perfectly.

I HAVE ANOTHER THAI ORANGE DUCK RECIPE UNDER WRAPS , that is basically a replica of the first Thai dish I had. It was an orange duck dish that made me fall in love with Thai food. This dish is just as good, but easier.
THAI ORANGE GLAZED DUCK RECIPE...
THE INGREDIENTS FOR DUCK
4 DUCK LEGS..Marinate the duck overnight in... sprinkle salt over the duck legs generously to your taste, I recommend at least 1 teaspoon of salt, 1/4 cup light soy, 2 tablespoons of sichuan peppercorns, and sprinkle half a teaspoon of Thai 7 Spice over the duck. Rub all these ingredients into the duck and marinate over night.
THE FOLLOWING DAY REMOVE ALL THE PEPPERCORNS AND FRY THE DUCK ON BOTH SIDES FOR 2 TO 3 MINUTES IN 2 CUPS OF VEGETABLE OIL
THE THE ORANGE SAUCE...
In a small pot or pan, bring to a boil 2 cups of water, add 4 oranges sliced in half and de-seeded, squeeze the orange juices into the pot- add the skins to the water and... 1 chicken cube, 1 tsp salt or to taste, 1 tbs light soy sauce, 5 tbs of granulated sugar and 3 tbs of golden syrup or maple syrup-stir vigorously when you add the sugar and syrup. Then turn down to a low simmer, and add 3 cinnamon sticks and 2 star anise.
Simmer the sauce for approximately an hour to half past the hour, until it's the consistency of a syrup.
Reheat the Duck Legs before serving and drizzle the sauce over the duck legs.
If you'd like to add a nice touch, to this dish. Cut the orange skins into wedges, and decorate the dish with a cinnamon stick and the star anise.
It's a superb dish in my opinion. I like to serve this with Jasmine Rice.
