Sales of Goose have sky-rocketed here in the UK leading up to Christmas. This succulent roast Goose served with manchamanteles (a fruity, pungent Mexican sauce) is a very tasty alternative to common and sometimes boring holiday Turkey.
Don't get me wrong. It's not that I don't like Turkey, I just prefer the darker richer meat of goose. Goose is so flavourful and rich, and this Mexican sauce is a perfect pairing for the succulent juicy meat.
I served this with a side of mashed sweet potatoes and mind blowing delicious cornbread stuffing
If you want to try something new this holiday, try goose. It is the popular holiday and celebration meat in many parts of central and eastern Europe. It is the Christmas bird in Germany, Austria, and is still a popular holiday bird in Russia. It used to be the Christmas bird in the UK, and is making a huge comeback this year. Sales of goose have sky-rocketed here in the UK leading up to Christmas. I am happy about this.
ROAST GOOSE HOLIDAY RECIPE
For the Goose: My Basic Adobo Marinade
The goose needs a tablespoon of salt. First sprinkle some of the salt under the bird and inside the cavity; after removing the giblets if there are any. Reserve the remainder of salt for sprinkling evenly over the top just before placing it in oven. Mix together...1tsp Red Wine Vinegar, 2-5 tbs Light Soy Sauce, and...1 heaping tsp of Oregano, 1tsp black Pepper...
