This duck-tastic dish is so versatile and so good; you can also use this simple recipe on chicken legs or thighs, but I prefer duck it has a rich and flavorful succulent taste.

Alternatively you can shred this meat off the legs and make it into a Chinese pancake, served with spring onions, plum and or hoisin sauce-these are the main two ingredients of this dish along with Chinese five spice.

THE INGREDIENTS
This recipe is for 4 Duck Legs. Whisk all of these ingredients together and set aside. 3 tbs soy sauce, 2 tbs of hoisin sauce, the juice of 1/2 an orange, 3 tbs sugar,1 DSP of salt, 1/2 tsp pepper, 1/2 a cup of plum sauce,
1/2 tsp of Chinese 5 spice, 2 tbs of garlic paste

THE DIRECTIONS
Preheat oven to 180C
Pour the ingredients over the duck, then make sure all the pieces of duck are well coated with the sauce. Marinate for 20-30 minutes.

Bake in the oven on a baking tray or oven proof fish for approximately 1 hour and 20 minutes. Baste the duck with the sauce marinade every now and then, particularly in the first 30 minutes is crucial before the sauce dries up or burns-if you feel the sauce is burning as a result of the sugar add in a little water or stock.
In the last 30 minutes add in some sprigs of scallion they give the duck a nice flavour.
