Dover Sole is the most highly prized fish in the British Isles, only rivalled by the mighty Turbot. Let's put it this way, if the Turbot is Messi then the Dover Sole is Ronaldo.
The Dover Sole like the Halibut and Lemon Sole is from the flatfish family. Chef's have never ceased to lavish praise on the firm, robust texture of the Sole. The flavor is mild; but often cited as superior in taste.
Gordon Ramsay is the only Chef who claims to prefer Lemon Sole. The Dover Sole is another one of my favourites, albeit I admit it is slightly overrated.
The best way to serve the Sole is simple, it's a natural beauty and needs very little makeup.
