LOBSTER MAC & CHEESE

Chunks of Lobster and Crayfish, coated in a cream cheese sauce
This cheesy creamy Lobster Mac and Cheese would definitely be a strong contender for my last meal on earth. For this recipe I used my favourite cheeses- Cheddar, Mozzarella and Parmesan.
This is not something that I make every week or every month. I make this once in a while as a treat or for a special occasion.
The Lobster and Crayfish just makes this dish extra special.
You can always substitute the Lobster and Crayfish with shrimp or prawns, and it would still be delicious.
LOBSTER MAC & CHEESE RECIPE
THE INGREDIENTS
Lets begin with the grated cheese. It's 5 cups of a mixture of Sharp Cheddar and Mozzarella, this includes 2 handfuls of Cheddar and 1/2 cup of grated Parmesan for the topping. In addition to the Cheese 1/2 a cup of breadcrumbs also for the topping.
The remaining ingredients for the cheese mix are:
1 cup of whole milk, 1 cup of double cream, 1 tsp salt, 1 tsp of white pepper. 4 Lobster tails and 1 pound of Crayfish meat.
Directions.
In a large pot on the stove heat about 4 tbs of garlic butter oil in a pot.
see here for recipe. Once the garlic butter is heated sear the lobster tail meat in the butter oil until almost done but not quite, add the crayfish and cook in the butter oil until halfway cooked. Set aside the lobster and crayfish meat for later.
In the same pot add the milk and cream. Take 2 handfuls of the grated Cheddar cheese and set aside for the topping. Add the remaining cheese to the pot on medium to high heat. Add the salt and pepper, and melt the cheese into the sauce.
Once the cheese has melted remove pot from stove. slice up the lobster into chunks and add to the cream cheese mixture, also add the crayfish.
