CHAR SIU PORK

Although I love pork, I admit, that I rarely order pork dishes as an entree, when I go to Chinese restaurants. I'm far more likely to order roast duck, crispy shredded beef, or sea bass. And yet pork is extremely popular in China. In fact, it is the most popular and loved meat in China.

Although I love pork, I admit, that I rarely order pork dishes as an entree, when I go to Chinese restaurants. I'm far more likely to order roast duck, crispy shredded beef, or sea bass. And yet pork is extremely popular in China. In fact, it is the most popular and loved meat in China.
The pork dishes I usually order in Chinese restaurants, or for take-out are likely to be starters such as pork dumplings or wanton soup, or the small bits of pork in special fried rice-my favourite side dish in the world. But I do occasionally enjoy pork as a main, and barbecue, or char siu is the dish I sometimes order when I want a change, or have a Chinese buffet.
I have not made a food post for a long time, for various reasons. One of the reasons is because it's time consuming, and I just wanted to enjoy my food, without feeling pressured to take pictures. I also have been severely ill and weak this winter, with a terrible flu. I have a back log of recipes yet to share. This is the easiest, so it seems fitting to break my silence with this recipe
The ingredients for this recipe are very similar for Chinese Barbecued roast duck, which is my favourite dish in the world. In fact I will use this char siu mixture for my next roast duck dish, and I have frozen it, until such time. For a short-cut you can buy Char Siu sauce, and just add the few extra ingredients. But this recipe is made from scratch.
THE MARINADE
For this I recommend Pork Belly. Cut into thick strips as shown above
Whisk Together: 3 tbs Hoisin Sauce, 1 + 1/2 tbs of Sherry, 3 tsp of Sugar, 1 DSP (dessert spoon) of Salt, 3 tbs of Garlic Powder, 3 tbs of Onion Powder, Half 1/2 tsp of Chinese 5 spice powder, 3 tbs of Annatto Oil, At least 4 tbs of Dark Soy Sauce, 1 tsp Black Pepper, 3 tbs of honey or golden syrup.
Marinate the pork for at least an hour, I recommend at least six hours. Then...
Roast in a high temperature oven for approximately an hour and a half, splitting the time on each side. Glaze the pork with the sauce, and rest for half an hour. Then cut into small pieces and serve with rice.
