WITH A STICKY FUDGE SAUCE
Sticky Toffee Pudding, also known as Sticky Date Pudding is one of the most sinful, and decadent desserts of all time. To describe this dessert as delicious would be the understatement of the Century. Madonna is a fan, and it's one of David Beckham's favourites. Kelly Rowland also enjoys this special treat when she visits London.
So what is Sticky Toffee Pudding? In basic terms it's a moist rich sponge cake made with a regular cake batter. Dates are an essential ingredient. But they should be blended in, or chopped so finely that you barely taste them. The icing on the cake is the sauce that comes with it.

There are many variations of this dessert but nearly all of them include the use of dates and brown sugar. It's a great dessert for the fall and the upcoming holidays.
STICKY TOFFEE CAKE RECIPE
THE CAKE INGREDIENTS
2 cups of cake flour, 1 stick of butter, 1/2 cup of brown sugar, 5 tbs of caster sugar, 1/2 cup of pitted dates, 3 eggs, 1 tsp of vanilla.
Extras: Just over 1/2 cup of hot water to cover dates, 1 + 1/2 tsp of baking powder to sprinkle on dates. Set aside a few dates to decorate the top of the cake, do this after pouring the sauce over the cake.

THE SAUCE INGREDIENTS & DIRECTIONS
Bring to a boil 2 cups of whole milk or heavy cream, 1 stick of butter, 1 cup of brown sugar and 5 tbs of caster sugar, 1 tsp of vanilla. 1 tbs of rum or cognac (optional) Boil and reduce until thick and fudgy.
TO MAKE THE CAKE
Place the dates in a plate or pan large enough to hold them and pour over the hot water and sprinkle the baking powder. Leave for 1 hour.
In the meantime in a mixing bowl whisk the softened butter and the sugars together and then add the eggs and vanilla and mix. After the dates have been left to soak for 1 hour place the mixture of dates and water in a blender or food processor and blitz until the dates are no longer whole or solid. Add the mixture of dates and water to the butter and sugar and combine thoroughly.
Add the flour to another mixing bowl and to this flour add the wet batter ingredients. And mix so all the ingredients are thoroughly combined. Pour the cake mixture into a lightly buttered or sprayed spring form pan and place in a 175C preheated oven for 30-45 minutes. Times can vary, it really depends on your oven. Check after 30 minutes but not before. Leave the cake to cool once taken out of the oven. Then remove from pan and poke holes at the top with a toothpick. Then pour the sauce over the cake. And serve.
