I love Pork Chops. They are one of the few cuts of meat that are still relatively inexpensive and they cook quickly.
I always buy bone-in Pork Chops; simply because when the chops cook, the marrow releases the juices that add more flavour to the chops. I never ever buy boneless Pork Chops. They simply don't have that succulent taste.
I have a Roast Pork Belly recipe made for this gravy but it also works really well with these pork chops. It is best to make the gravy first and then add the sauce to the pan where the Pork Chops are cooking in the last 5 minutes.

The Apple Brown Gravy
The Remaining Carton of Apple Juice
2 yellow onions sliced 1 Garlic Bulb sliced
1 cup of Prosecco
2 cups of Chicken or Pork Stock
1 telma stock cube 1 beef stock cube
1 cup cream
A Sprinkling light Soy Sauce
Strained Drippings from the Pork Chops
Salt and Pepper to taste
Granulated Sugar to taste (cuts acidity of Apple Juice)
The Directions:
Bring to the boil adding all the ingredients to a stock pot with the exception of the cream and salt and pepper. Boil for 10-15 minutes and then whisk in the cream. Whisk as you add the cream vigorously, put the pot on a medium boil to thicken and reduce the gravy to the desired consistency. Add sugar and salt and pepper to taste at the end of cooking time.
