SEA BASS FILLETS
WITH OLIVE & CAPER SAUCE

Bass fillets are quick and easy to cook, paired with a wonderful foolproof olive and caper sauce, this is perfect for a weeknight meal as the UK heads for an Indian summer. It's still sweltering here.
This recipe works well with all types of white fish and fillets. Tilapia, Sole, Cod, Halibut, Bream and many others will be as delicious and as easy to cook.
SEA BASS FILLETS RECIPE
If it flakes it's cooked

This recipe is for 2 Bass fillets with skin on. Ensure the the fillets are pat dry and then salt and pepper generously on each side. Heat a pan with olive oil or vegetable oil and sear the skin side on high heat for a minutes until it has a crisp skin. Turn the heat down to low and then cook on the other side for a few minutes or until the fish flakes, when it flakes you know it's cooked. Serve with the sauce poured over the fish. Enjoy!
