GREEK DOUGHNUTS

Loukoumades are delicious Greek doughnuts; fried then soaked in syrup or honey. They are absolutely heavenly and I decided I had to learn how to make them myself.
This recipe is really easy; simple, efficient, and uses basic ingredients such as flour, sugar, and water, the only remotely exotic ingredient is honey or in this case Golden Syrup.
LOUKOUMADES RECIPE
THE DOUGH
2 cups flour, 1 tbs of yeast, 1 tsp of sugar. 1 cup of warm water,
2 tsp cinnamon, 2 tbs golden syrup or honey, 1 tsp salt, 2 tbs sugar,
1 cup of vegetable oil
Step 1
Add the 1 tsp of yeast and 1 tsp of sugar to the cup of warm water.
Note: The water must be warm but not hot-if it's too hot or cold the yeast won't activate. Once you've added the yeast and sugar to the water whisk very briskly, cover and put in a warm place for about 30 minutes until the yeast is very frothy and activated.
Then Combine the rest of the mostly dry ingredients, as well as the syrup and 2 tbs of Sugar for the dough.
Add the 1 tsp of yeast and 1 tsp of sugar to the cup of warm water.
Note: The water must be warm but not hot-if it's too hot or cold the yeast won't activate. Once you've added the yeast and sugar to the water whisk very briskly, cover and put in a warm place for about 30 minutes until the yeast is very frothy and activated.
Then Combine the rest of the mostly dry ingredients, as well as the syrup and 2 tbs of Sugar for the dough.
Step 2
Once the yeast is activated whisk the yeast mixture again before adding it slowly but surely to the flour. The dough is not like pizza but more like a "very thick" pancake batter; thick and not to runny. Leave the batter to sit for half an hour. Cover and leave it in a warm place. Then whisk again and heat the oil.
Step 3
#You will need a bowl or jug of very warm water. Before you scoop doughnut balls and drop them in the oil, dip the spoon a few times in the water before scooping, so the mixture slides off spoon easily.
You need 1 cup of oil for frying. Heat the oil on very high heat for about 10 minutes and then turn to low-medium heat about mark 5. Once it's settled into the right temperature cook the doughnuts in batches by using an ice cream scoop or the 1 tbs cup of a measuring spoon and drop into the oil. DO NOT OVERCROWD the pan. The doughnuts will cook in about 4 minutes when they are super golden and puffy. Scoop them out with a large spatula or sieve, and place them on a plate lined with a paper towel.

THE SYRUP,
1/2 cup golden syrup or honey, 13 tbs sugar, 1 1/2 cups of water, 2 cinnamon sticks
heat this mixture on a stove top in a pot for 5 to 8 minutes until it thickens to a nice "syrup like" texture, whisk briskly and pour over the doughnuts or just serve alongside. You can also sprinkle icing sugar over the doughnuts which is very common.
