PIRI PIRI CHICKEN

If you've never heard of Nando's restaurants then i'll enlighten you. It's a famous franchise restaurant chain that started in South Africa and is now hugely successful and popular worldwide. The franchise is particularly popular in South Africa, UK, Ireland and Australia.
Nando's became famous for it's grilled chicken and accompanying peri-peri marinade sauces. They sell huge shelf loads of bottles of these peri-peri sauces. The actual/original name of the marinade is piri piri but I think the name was adapted and altered or got lost in translation.
The Portuguese claim to be the originators of this famous piri piri chicken as it's so called, but I think the real origins can be found in Africa. I love Piri Piri Chicken, but I wouldn't attempt this unless you have a grill, in the oven it just does not taste the same or as good.
PIRI PIRI CHICKEN RECIPE
The Ingredients
BLITZ IN A BLENDER IN 1 CUP OF VEGETABLE OIL
3 tbs garlic paste or 1 whole garlic bulb,
1 whole lemon juiced,
half an orange juiced and zested,
1 tbs salt, 2 tbs paprika,
1 tsp black pepper,
2 tbs tomato paste,
3 bay leaves,
1 tsp each of ...basil, oregano, and tarragon
1 red bell pepper
4 African Red Peppers (shaped like birdseye but larger)
3 tsp light soy sauce (optional)
RESERVE 2 TBS OF THIS MARINADE TO MAKE A SAUCE
3 tbs garlic paste or 1 whole garlic bulb,

RESERVE 2 TBS OF THIS MARINADE TO MAKE A SAUCE
Rub the marinade liberally over the chicken and let it marinate for at least an hour. Then salt it lightly but evenly before placing it on a charcoal grill and cook for approx 1 and a half hours or until it's cooked and the juices run clear. Turn frequently about every 15 minutes or so. To make the sauce use reserved drippings from the marinade as well as leftover marinade mixture from marination, place in a pot and add a cup of water a stock cube and bring to a boil.
