JAMAICAN COCONUT CAKE

Toto is a Jamaican coconut cake, a cross between a bread and a pound cake. I used to love it when my mum would make it when I was a child, but that wasn't often and for years I have been longing for the coconut taste of Toto.
My recipe is different from my mum's old recipe but if anything it tastes better. I've given the cake an update and a makeover.
Instead of baking the Toto in a loaf tin; I used a springform pan and I used sponge flour (cake flour) to give the Toto a more soft and spongy texture. Toto is a very personal recipe, some people like to add raisins, it's very popular to add rum. I didn't feel that it was necessary to add any extra ingredients than the recipe needed.

THE INGREDIENTS
Preheat your oven to 170C (guideline only)
The Dry Ingredients
1 + 1/2 cups of Cake Flour or All Purpose Flour, 1 tsp each of baking powder and baking soda, 2 or 3 tsp of Cinnamon, 1/2 cup of desiccated coconut
1 + 1/2 cups of Sugar (granulated or caster)
Icing Sugar for sprinkling on top
The Wet Ingredients
2 large eggs, 1 stick of softened butter (8tbs), 160mil of coconut cream, 1 tsp of vanilla and 1 tbs of coconut essence or flavouring

THE DIRECTIONS

Set aside 2 mixing bowls. In the first mixing bowl add all the dry ingredients except for the sugar and mix together so everything is well combined.
Step 2
Whisk the eggs together in a mixing jug, and add the sugar and butter to the other mixing bowl. Pour the eggs into the butter and sugar and mix with a whisk-you don't need a mixer this can be done by hand using a whisk. Mix with a whisk until light and fluffy. Then add the vanilla, coconut essence and coconut cream, you may need to melt the coconut cream in the microwave as sometimes it can solidify. Mix thoroughly.

Pour the wet ingredients into the dry and fold in gently with a wooden spoon. Try not to over-mix. Pour the batter into a lightly oiled or buttered springform pan. Bake for 50mins to 1 hour in the oven.
