LEMON & APPLE PUDDING
WITH CUSTARD

Every time I experiment with a new dessert recipe I say it's my favourite. But that's only if the sweet delight comes out perfect.
I love my cakes and puddings in all of their glory, and I love to serve puddings with custard.
I consider myself a cook who bakes not a baker who cooks. Anna Olson is a baker who cooks. But I don't have to be her to be able to bake a delicious sweet treat from time to time.
I have shaken up this delicious dessert with the addition of Apples. It's a really easy dessert to prep and bake. And very similar to my favourite dessert Eve's Pudding.
LEMON & APPLE PUDDING RECIPE
THE INGREDIENTS
1/2 Cup melted Butter
1 Cup of Sugar
1 tsp of Vanilla
1 385g can of peeled and sliced Apples
3 Eggs whisked (room temp)
Juice from half a lemon with 1 tsp of zest
1 + 1/2 cups of Sponge or Cake Flour
1 tsp of Baking Powder
1 tsp Cinnamon

THE DIRECTIONS
Preheat your oven to 170C guideline only.
Step 1
In a large bowl add the melted butter and sugar then whisk until thoroughly combined. Add the Vanilla, the eggs and whisk again.
Step 2
Next squeeze in the lemon and add the lemon zest. Then mix in the peeled and diced can of Apples. Then add the flour, baking powder and cinnamon. Then mix and combine. Pour the batter into a lightly greased or sprayed round Pie dish or baking dish. Smooth the mixture over with a wooden spoon.
Place into the preheated oven and bake for 30-40 minutes approx.
