I've been doing Cornbread all wrong. I just discovered this when I was making dressing for my Turkey. For the first time I decided to make skillet Cornbread; I tweaked my own recipe slightly and it was a smash hit. Now I'll never make Cornbread any other way. Skillet is the way to go.

SKILLET CORNBREAD RECIPE
Preheat oven to 170C (guideline only)
2 whisked Eggs, 1 cup milk, , 1/2 tsp cinnamon, 1/2 cup of brown sugar, 5 tbs Granulated Sugar, 1 tsp Baking Powder, 4 tbs melted Butter, 1 tsp Vanilla, 1 and 1/2 cups of Cornmeal, 1 cup of self raising flour, 1/4 tsp of salt
THE DIRECTIONS
In a mixing bowl mix the dry ingredients; the flour, cornmeal, sugar, cinnamon, salt, and baking powder. In a separate bowl mix the wet ingredients. The milk and cream, the melted butter, add the whisked eggs, Vanilla -combine these together before adding to the dry ingredients. Incorporate the wet and the dry and mix well. Do not overmix, just mix until it's combined and smooth. A few lumps won't matter. Pour about 1/4 cup of vegetable oil into a pan or skillet and place in the oven for 10 minutes to heat, so it's sizzling before you add the batter. Add the batter to the oil as soon as possible and bake in the oven for approximately 30 minutes. Do not peek.
Let the bread cool for 20 minutes before cutting a delicious piece.
CORNBREAD DRESSING RECIPE
You will need. 1/2 tsp each of rosemary, thyme and sage, 2 tbs of melted butter, 1 cup of chicken stock, 1/4 cup of milk.
Crumble the bread in a mixing bowl and then mix the stock with melted butter, milk and all the herbs. Pour the herbs over the bread and in a lightly greased or sprayed baking pan add the cornbread and pack it all in together.
Place in a preheated 160C oven for about 40-50 minutes. Serve as a side dish for a Roast Meal.
