THIS ROAST PORK WAS ABSOLUTE MELT IN MY MOUTH-FOOD PORN HEAVEN. It was succulent, juicy, extremely tasty and flavourful. The meat was moist and tender, while the skin-the crackling, was delightfully crispy and charred. The taste lingered in my mouth long after...
This was an extremely easy recipe. It doesn't involve boiling or basting with water. I have personal concluded that this is ONE OF the best Chinese Roast Pork Belly RECIPES around.
The secret in this Roast Pork Belly is in the marination. For this dish lots of people use a dry rub, I don't like that at all. I feel that a dry rub, makes the pork just that...dry. But of course to get the crispy crackling it can't be wet before going into the oven.
To get what I desire out of this pork, is to marinate it in Hoisin Sauce, Soy Sauce, Salt, Five Spice powder etc...overnight. Then you take the pork out the following day, you remove all of the liquid marination and you pat it dry with paper towels....
You leave it out to dry for about an hour. Then you rub salt on top before placing it on a wire wrack, and blasting it with heat for the first twenty minutes.

THE INGREDIENTS
1 PORK BELLY SCORED, 3 TBS HOISIN SAUCE, 2 TBS LIGHT SOY SAUCE, 1/2 TSP 5 SPICE POWDER, 1 TBS OF SALT FOR SPRINKLING ON PORK MEAT, 2 TSP OF SALT FOR RUBBING ON SKIN BEFORE IT ENTERS THE OVEN, 3 TBS GARLIC PASTE, 2 TSP ONION POWDER, 1 TSP BLACK PEPPER, 1/4 CUP OF ORANGE JUICE
THE DIRECTIONS
1. Sprinkle a tablespoon of salt on the pork, but not the skin. Leave the salt to penetrate the pork for half an hour. Then mix the rest of the marinade together...the Hoisin Sauce, Soy Sauce, 5 Spice Powder, Garlic Paste, Onion Powder, Black Pepper and Orange Juice, make sure these ingredients are blended well...
