Calentado is a breakfast dish from Colombia. Calentado means heated or in this case reheated. The dish typically includes rice, beans, an arepa, fried egg and meat; usually either pork or beef in their various forms. I love Colombian food and I am a No Reservations fan. The episode on Colombia is my favourite of all time.

The reason that Colombian food lacks international representation is mainly because of proximity, and location. Unlike Mexico, Colombia does not border the US, and the influx of Colombian immigrants are incomparable to the huge numbers of Mexican immigrants living in the US. If Colombia were Mexico I have no doubt that it would be a celebrated and loved cuisine, just as Mexican cuisine is.
Calentado is a hearty and filling breakfast dish. It can basically satisfy your appetite for an entire day.

For the Egg-Sunny Side Up
Turn the pan onto medium heat. Add a stick of butter to the pan. Allow the egg to melt. Than crack the egg and add it to the pan. Sprinkle a quarter teaspoon of salt to the egg. Cook until the egg white is firm and solid, but make sure the yolk is still jelly like.

For the Egg-Sunny Side Up
Turn the pan onto medium heat. Add a stick of butter to the pan. Allow the egg to melt. Than crack the egg and add it to the pan. Sprinkle a quarter teaspoon of salt to the egg. Cook until the egg white is firm and solid, but make sure the yolk is still jelly like.
For the Beans
Ideally you would use pinto beans for this. But you can use kidney beans or red beans.
Ingredients
3 cups of beans, 3 pig tails, or 3 slices of pork belly
1 whole garlic bulb cut in half, 1 yellow onion peeled but kept whole, 1 carrot cut in half, 1 tbs of tomato paste, 1 red bell pepper, 1/2 tsp of cumin, 1 bunch of Cilantro, 9 cups of water (approximate), 1 tsp of black pepper 2 tsp of salt or to your taste
1. Wash the beans and soak overnight in 9 cups of water for at least seven hours. Soak in the same pot you'll cook the beans in. The next day take the beans to the stove and add all the ingredients to the pot, except salt, and meat.
2. In a separate pan sear the meat in 1/2 a cup of cooking oil. If you're using pig tails don't add salt. if you're using pork belly add a sprinkling of salt and add a sprinkling of soy sauce for flavour. After searing and browning for about ten minutes, then add the meat to the pot. Bring the pot to a boil for ten minutes and then turn to low, stir and let simmer for approximately two hours, or until the beans are cooked.
3. In the end check for salt. And add to your taste. Pour half the liquid from the pot in a blender, add the carrots and blend, then add the broth back to the beans. Stir and serve according to this dish.

The next day you reheat the rice and beans. Turn the pan to medium heat, when it gets hot, add the rice, and then the beans and stir, so the beans and rice are well incorporated. Let it reheat for about fifteen minutes or until warm.
Alternatively heat the egg and rice separately using the same method, and mix the beans and rice together once cooked. Serve with the meat, the arepa, and place the egg on top of the rice and beans.
