Chinese Chicken and Ginger Soup

When I'm feeling particularly down, or I have a cold, or I'm going through a difficult time with my menstrual cycle, I drink this soup. I don't think this soup has healing or medicinal properties, I know it does. It may be the healthiest recipe I will ever share, and it's also the easiest. All you need is water, fresh ginger, an onion, some garlic cloves, and some scallion, and you're almost there. At the beginning of this year, the UK was experiencing arctic and freezing cold weather. And as a result, I picked up a cold. Nausea, headaches, and infections plagued me. I drank a few bowls of this soup over two days and my cold vanished, my body recuperated, and I healed. You can use any kind of Chicken, but it must be on the bone, as this gives the soup much of its flavour.

Simbooker's Recipe & Ingredients
8-10 Cups of Water, 5 chunks of Fresh Ginger, 3 Scallions, 1 Yellow Onion Peeled and kept whole, 6 Garlic Cloves, 1 tsp black pepper, 1-2 tsp of Rice Wine or Red Wine Vinegar, 1/2 (Half) a tsp of Sesame Oil, 1/2 tsp sugar,
Fish Sauce to taste, 1 + 1/2 tsp of Soy Sauce, Salt to taste
Bring a large pot of water to boil add soy sauce, a sprinkling of fish sauce, ginger, scallions, whole onion, garlic, and 1 tsp of salt (I usually start with this amount of salt and add more if I need later) Add Chicken and sesame oil, and boil for about eight minutes. Then turn heat down to low and simmer for 30 minutes. After 30 minutes taste the broth for flavour, if it needs more salt it's best to add more now.
Add remaining ingredients...pepper, sugar, vinegar, and simmer for about another 30-40 minutes. In the final few minutes check for salt and add as desired. When finished, remove pot from the stove and leave the soup to sit for at least fifteen minutes. Then strain through a colander with small holes, for a clearer broth. Then serve as desired and garnish with scallions.
