CHINESE WONTON SOUP

Argh...delicious Wonton Soup. One of my favourite soups of all time.
A delicious savoury broth of chicken stock, flavoured with garlic, spring onions, and ginger filled with delicious meat dumplings.
I like chicken, pork, and my favourite is a mixture of ground shrimp and pork. But this is the pork version.
Wonton soup is not only delicious, but very healthy. Even if you are using ground pork.
WONTON SOUP RECIPE
1. Bring a pot of chicken stock to boil, or a large pot of water and add 2 chicken stock cubes, 1 whole onion peeled and sliced down centre, 1 garlic bulb, 5 slices or chunks of ginger, 1 bunch of spring onions, salt and pepper this to your taste.
2. Boil for 10 minutes and then turn to a low simmer. Cook the stock until the broth
or soup has a rich flavour.
How to make the Wonton Filling
For this recipe you will need 1 pack of ground pork. And...
2 TBS SOY SAUCE, 1 TSP SESAME OIL, 1 +1/3 TBS OF DRIED CHIVES,
A BUNCH OF FRESH CHOPPED SCALLION, 3 tsp garlic paste, 1 tsp salt, 1 tsp pepper, mix the ingredients together then sprinkle all over the pork, then rub the ingredients in and leave sit sit for about 10 minutes...
3. Take 1 tsp of the ground meat and add it to the centre of the wonton wrapperBring another pot of water to a boil. If you boil the Wontons in the soup stock the broth will becoming too cloudy. Once the pot is boiling, add the Wontons and then add 1 tsp of salt. Boil the Wontons for about 8 minutes. Then strain and add to soup. |
4. slightly wet your hands with some warm water and spread it around the edges of the Wonton so it sticks together easier. Then fold the edges, in a triangle, then fold the other two edges and twist and pierce the Wonton, and set aside. Repeat for the remaining Wontons |
