RED BERRY CHEESECAKE

The first time I decided to make Cheesecake I went through a bit of dilemma!
Should I completely bake it or not? Should I partially bake it, or not bake it at all? I decided to go with this recipe and it came out great.

The only part of this cheesecake that was baked is the biscuit base and it wasn't baked for long. The cheese filling was set using gelatin and cooled in the fridge. But I have a confession to make. I will be baking my cheesecake next time so I can confirm which version I like best.
Cheesecake is such a great dessert for the upcoming holidays. I actually don't know anyone who doesn't like Cheesecake; adults and kids love it alike and it's easy to make especially when it's unbaked.
BERRY CHEESECAKE RECIPE
THE INGREDIENTS
The Biscuit Base
17 McVitie's Digestive Biscuits UK (250 grams)
or Graham Crackers US
2 tbs sugar
8 tbs of melted unsalted butter
The Cheese Filling
4 tubs of 180 grams of room temperature Philadelphia Cream Cheese
720 grams of cream cheese in total
and 180 grams of sour cream
1 + 1/4 cups of Confection/Icing Sugar
1 tsp of vanilla extract
You can whisk this mixture altogether with a hand mixer, standing mixer or simply use a whisk with your hand
2 sachets of Dr.Oetker gelatin dissolved in 16 tbs of hot water whisk briskly until it bubbles up, leave to sit for 5 minutes and then pour into the blended cream cheese mixture
