MAC "N" CHEESE

This is the Mac and Cheese with the volume turned up, Cheesy and delicious with shredded pieces of Duck Leg meat.
The creamiest richest most flavorful Mac and Cheese with slices of Duck underneath the cheesy Mac
I think the essential ingredient in Mac and Cheese is... well...the Cheese. Use the combinations of cheeses you love the most and you'll get exactly the flavour and taste that you want from this dish.
My favourite cheeses are Cheddar and Mozzarella, so that's what I use. Roasting 2 juicy Duck Legs and shredding or cutting slices of the meat into the cheesy Mac makes this Mac and Cheese all that more delicious.
MAC AND CHEESE RECIPE
THE INGREDIENTS For the Cheese Mix
5 and a half 1/2 Cups
of Pre-grated Cheddar and Mozzarella Cheese an equal mixture of the 2
3 + 1/2 Cups Whole Milk
1 Cup of Double Cream
1 tsp salt, 1 tsp ground black pepper
500 grams of large/thick Elbow Macaroni
3 tbs unsalted butter
1. Pre-heat oven to 180c guideline only
2. Take 3 Handfuls of the Cheese and set aside, this will be reserved for the topping. The rest for creamy cheese mixture
3. Boil Pasta in a large pot of boiling salted water until al-dente, not soft. Test with a fork. Drain completely with a colander
4. Lightly butter or grease the inside and bottom and upper sides of a large rectangular
baking dish.
Step 1 The Duck
I use 2-4 meaty Duck Legs for this but you can use a whole Duck. In a jug mix together a quarter cup vegetable oil, 2 tbs of garlic paste, 2 tbs soy sauce, and 1 tbs of salt. Pour this mixture over Duck Legs and marinate for at least an hour. Then bake in a 180C oven (guideline only) for 1 hour skin side up. You can prep this ahead of time. Once cooled slice or shred the Duck Meat into large meaty chunks.
Step 2
In a large pot add the milk and bring to scalding heat. Add the butter, cheese, cream, and stir continuously so the ingredients don't coagulate. Add the salt and pepper, stir thoroughly once all the cheese has completely melted remove from the pot from the stove.
Step 3
Pour the pasta into the cream cheese mixture and stir in thoroughly; then add the duck and stir and mix in once again so that the Duck is evenly distributed throughout. Make sure the cheesy sauce covers the whole pasta. Pour into the baking dish, and then sprinkle the 3 handfuls of the reserved cheese on top. Bake in the oven for 25 minutes. Then serve and enjoy...
