THAI STEAMED FISH

WITH GARLIC AND LIME

This is one of my absolute favourite fish dishes. I first got the inspiration from that lovely lady who has a food blog and channel called Hot Thai Kitchen.
Thai food has long been one of my favourite cuisines. The balance of sweet and sour, bitter, pungent, aromatic and spicy never ceases to tantalise my taste buds.
I have adapted the recipe to suit my own tastes but all the big hitting flavours and ingredients are used. Lime and garlic are the key ingredients. The original recipe just uses the raw ingredients, where as I cook the sauce.
THAI STEAMED FISH RECIPE
SAUCE INGREDIENTS & METHOD
Bring 2 cups of water to a boil. Add the juice of 1 whole lime, a few dashes of fish sauce, 3 tbs of Sugar, 10 shallots cut in half, 1 whole garlic bulb, 2 or 3 tbs of Sweet Chilli Sauce, 1/2 tsp pepper, 3 tbs of soy sauce,
1 stock cube (telma) boil and then simmer until the sauce no longer has a raw flavour and is slightly thicker than watery in consistency.

THE FISH
I've used Sea Bass-in Thailand they use Barramundi which is sometimes called Asian Sea Bass. The time it takes to steam the fish depends on the size and thickness of the fish. I don't have a steamer so I place the fish in an oven proof dish then I place this in a baking tray filled with water just a little more than halfway.
I salt and pepper the fish on both sides and then cover with foil. I place it in the oven preheated at 175. This fish took 30 minutes. When the fish is done I placed it on a white plate and poured the sauce over it.
I garnished with cilantro and garlic and served it up.
